Meal Prep Monday: Crock Pot Beef Roast with Veggies
If you are like me, USUALLY Sundays are for meal prep. But right now...Sundays are for playoff football, so I rely on my slow cooker to cut my prep time to nothing. Yes, I own TWO slow cookers so I can slow cook two meals at once. 15 minutes of prep means I can focus on more important things on Sunday while the slow cookers do the hard work.
I like this recipe from Real Simple Good because it is SO easy. Switch up the protein, veggies, and spices and you will have unlimited options with this one.
