Blood Orange, Beet, and Fennel Salad

Beets are a great source of nutrients, including fiber, folate and vitamin C. Beets also contain nitrates that may help lower blood pressure and well as betaine, a nutrient that helps protects cells, proteins, and enzymes from environmental stress. It's also known to help fight inflammation, protect internal organs, improve vascular risk factors, enhance performance, and likely help prevent numerous chronic diseases.  

Fennel is a spice and a plant with a long tradition in the naturopathic world for decreasing inflammation and help with stomach/gut disorders.
